Olea Nostra, inside the Olive Line Group, is one of the leading Spanish manufaturers of table olives.
Currently, the group processes more than 10 million kilos, being well known for its extraodinary know-how in olives oxidation, and is established in more than 30 countries, supplying retailers and chains such as Metro, Auchan, X5 or Leclerc.
The Group es specially recognized for it’s outstanding knowledge in the olive oxidation process, being particularly proud of our black Queen (Gordal) oxidized olives.
Quality and Food Safety
Quality is one of the main goals within Olea Nostra’s principles. Our facility carries out strict quality controls that pursue the delivery of the highest quality to our customers. To do so we are based on a multidisciplinary and senior human team which represent the foundations of an effective and efficient work. Besides, it relies on the latest technologies for the production and maintenance of maximum quality standards, and so reassuring food safety.
Among our processes and facilites we can highlight:
– Metal detectors in every packaging line.
– Specific software for the sterilization control and pasteurization, with automatic lethality calculations (Ster. / Past.) for each of the autoclaves and pasteurizers.
– External verification of food safety and quality certified by an external laboratory of maximum prestige, accredited in ENAC.

Varieties
Manzanilla
Also known as Sevillian Manzanilla, is considered globally as the table top olive. The pulp to bone ratio is high, it’s firm and has great quality and also can be deboned with ease.
Carrasqueña
It’s another variety of the Cacereña which is known by this name in the Province of Caceres, in Spain.
Queen (Gordal)
Also known as Gordal is known for its bigger size and exquisite flavor. It has a fleshy skin and a fibrous texture. It’s perfect for the appetizer, both in the Green and Black varieties.
Hojiblanca
The third most harvested in Spain after Picual and Cornicabra. It has a sweet flavor with a slight sower and spicy touch. Due to its hardness, it’s often used for black olive dressings.
Cacerena
Also known as “Manzanilla Cacereña” due to its popularity in the Province of Caceres. It’s a double aptitude variety much appreciated for dressing, both green and black, thanks to its pulp quality
